Recipe Canestrelli


  • 100g of flour
  • 100g of starch or cornstarch
  • 120g of butter
  • 50g icing sugar
  • 2 yolks of hard-boiled eggs
  • 1 pinch of salt
  • 1 egg white
  • lightly beaten
  • sugar to taste


You do firm up the eggs and let them cool completely before obtaining the yolks. In a bowl sift together the flour and starch (or cornstarch). Make a well in the center then pour the icing sugar, egg yolks firm carefully sifted, butter at temperature room and the vanilla flavor. Mix everything very quickly knead with your hands, then roll out the dough with a rolling pin. Obtained with the special molds cookies, thickness of 1 cm. Brush the surface with egg white and bake in preheated oven at 150 ° C. simmer 150/170 ° C for 20 minutes, being careful not to brown too much cookies. Remove from oven and artificial snow with powdered sugar.
